Hi! I cannot believe that Easter is right around the corner! My kids and I are all so excited that the Children’s Program for the hotel guests will begin next Thursday with The Farm. We are also looking forward to seeing all of the guests that come down year after year to celebrate their Easter at Lago Mar.
I am pretty sure this is the 25th anniversary of my Easter Program, which is complimentary for the hotel guests age 5-12. What is really neat is to see the “kids” from my program years ago who still come to Lago Mar every year and now they have kids of their own – I guess it does make me feel a little old though :).
Something else to report, I just now received a copy of Chef Phil’s Easter Brunch Buffet Extravaganza and it looks awesome! He is planning to have an omelet station, a carving station, a healthy salad bar and a fruit display. Some of his entree items include Clementine Salsa Snapper, New York Strip, Easter Ham and Stuffed Chicken. There will also be several desserts to choose from.
Our family tradition is to go straight from The Hunt, located on the playground, into Acquario for The Extravaganza! My kids also love seeing the Easter Bunny and having their pictures taken with him.
Many of our guests and members enjoy visiting the resort later in the day for our Three Course Easter Dinner! Again, Chef Phil and his staff out do themselves. The entrees that Chef has decided to serve this year are Sous Vide Grouper with pomegranate beet sauce and lemon toasted almond farrow risotto, a slow roasted New York Strip with Jack Daniels sauce and assorted sweet potato mashed, a delicious Roasted Leg of Lamb with mint chimichurri, orange mint glaze and smashed herb fingerling potato, and, last but not least, a coconut crusted chicken with green mango slaw and plantain scallion jasmine rice.
