Hi! I hope everyone had a very Merry Christmas! We have had a great holiday here at the resort. The decorations definitely helped to create a magical, festive ambiance for all, and Chef Phil’s Christmas Dinner was a huge hit! I have heard lots of compliments on the Hearty Winter Vegetable Soup with white bean farro. It must have been hard for our guests dining with us to choose between the Roasted Turkey Dinner, the Chateaubriand Sous Vide Filet Mignon, and the Pan Roasted Grouper. The apple walnut cornbread stuffing and the roasted cauliflower celery root mashed really made the Turkey Dinner so different and delicious. However, I would have probably selected the Chateaubriand with grainy mustard mushroom sherry wine sauce, pancetta roasted Brussels sprout potato hash, green beans, carrots, and red peppers because Christmas dinner is a perfect time to eat something so decadent! Just look at the dessert spread, if that’s not decadent I don’t know what is.
The beautiful weather allowed us to seat guests on the Sea Grape Terrace, resulting in more happy guests. The kids and I are looking forward to the Family Activities this week. We started with Bingo Night and it was such a success! Lots of children won prizes and everyone left with a prize for playing so there were lots of smiling kids at the end of the evening. We still have the Petting Zoo, Hula Show, Outdoor Movie, and much more. Happy Holidays to everyone!
