Hi! I am so disappointed that I personally did not make it to the Boat Show this year but I heard it was amazing! Chris took the boys and they loved picking out their dream boat (they had so many to choose from) and eating all of the good food. They even tried alligator for the first time and raved about it! I was with Demi, the tennis star, all weekend at a tournament so I missed The Show but we did take home another trophy so it was worth it!
Last night I took off a night of cooking to dine at the resort and try Chef Phil’s new dinner menu. It debuted the first evening of the Boat Show and was an instant hit with our new and former guests. We also had several members join us just to sample the new additions. Chris, the kids and I really enjoyed the Cheese and Charcuterie Platter with cheeses from all over the world including rosette de Lyon, soppressata, fig spread, cornichons, and brandy cherries with crackers and naan bread. It was the perfect appetizer for our group. After that treat, we sampled the Pineapple Pear Salad and Dani could not stop eating it…so delicious and healthy. As far as entrees go, we ordered a few things for the table. I strongly recommend the Lightly Blackened Mahi Mahi, especially if you are looking for something gluten-free. The Shrimp and Scallop Roasted Cauliflower Carbonara were so decadent with the fettuccine, crispy pancetta, roasted tomatoes, cauliflower, basil, and cream sauce. The Lemongrass Crusted Snapper is also going to be a popular dish with my crowd. The fava bean puree was so different and delicious. We all voted that the next time we dine at the resort we are definitely ordering the Southwest Rubbed Ribeye. In the past, we have served Ribeye as a Saturday night special and it ended being so popular that we decided to make it available every evening. Everyone that I spoke to was delighted with the new menu. We are very much looking forward to another great season! We can’t wait to welcome our wonderful resort guests and members to return to Acquario for many more fabulous culinary experiences in a beautiful, exclusive setting. Cheers!
