Hi! Yesterday I celebrated my 49th birthday, but to be honest, I don’t really feel 49. This is all because my kids and I have recently begun a clean and healthy diet. You’ll be excited to know that Chef Phil is also feeling healthy and building a new menu.
This new menu, which will be coming out in the fall, has some great new choices for those of us who are really trying to live the clean life. Personally, I am so looking forward to the Quinoa Roasted Chicken Salad. This option will include sous vide chicken, quinoa, pickled cherries, kale, spinach, cranberries and almonds, all tossed in a honey lemon vinaigrette. Chris is excited for the gluten-free rib-eye steak, which is 12 ounces, coffee and chili rubbed, and includes black garlic caramelized onion butter. For those of you who are gluten-free and love steak, there is also a beef tenderloin and skirt steak coming, too. Little Dani is looking forward to the snapper in a romesco sauce, including quinoa risotto, roasted cherry tomatoes and micro greens with a basil vinaigrette. Demi is not budging from her all time favorite, which will be returning to the menu, the Shrimp and Clam Garganelli. Another new addition to the Acquario menu is the Mahi Mahi, which will be served in a coconut basil sauce with pina colada foam, mango relish, and rock shrimp Caribbean jasmine rice.
Please don’t hate me if Chef Phil changes his mind and decides to tweak one of these items. I’m even trying to talk him into adding an organic chicken dish. We’re so excited for this new menu, and we might even have some healthy new items arriving in The Soda Shop in the near future. We’re having a great summer here at the resort. In fact, I’m looking forward to some other moms and kids coming over to the resort for a play date this afternoon. The kids are looking forward to playing on the playground, swimming and battling it out in mini golf, while the moms are looking forward to a tropical drink and a toast to the summer of 2015.
