Hi! Hope your summer is going well! We are having a blast at the resort and already preparing for Fourth of July. Chef Phil has a fantastic menu planned which will be served buffet-style from 5:00 – 10:00 pm. Of course, reservations are available to guests and members only. Chef will be featuring two exciting new stations; a Kebab La Plancha Station with grilled chicken thighs, grilled shrimp, grilled vegetables, and grilled beef tenderloin kebabs. There will be three types of barbecue to choose from; Carolina, Sweet Kansas City, and Smoked Texas Peach Barbecue. Demi and Dani are super excited about the Avocado Toast Station. They can’t wait to try avocado toast with blackened shrimp, smoked chicken, pulled pork, fresh mozzarella, and even blueberries and grilled peaches; so extravagant! They will never be able to eat regular avocado toast again. The boys will go for the more traditional items, such as BBQ St. Louis Ribs and Turkey Burgers with Roasted Corn on the Cob and Baked Beans. I am going to splurge on the Corn Bread Crusted Mahi Mahi with smoked corn sauce. I will also have to try the Watermelon and Arugula Salad with Feta Cheese. I think Chris will try a little of everything. Hopefully, we will have room for the tasty desserts!
After dinner, we will be off to the beach with our huge comfy Lago Mar beach blanket from The Resort Shop to watch the fireworks. We can hardly wait for the Fourth of July!
