Hi! We have had such an exciting past week with the debut of Chef Phil’s new dinner menu in Acquario and the Boat Show coinciding. Everyone is saying that this was the “Best Boat Show Ever” and I definitely concur! The weather was absolutely perfect all five days and the energy of the show and in our town has been over the top! Of course, there was every kind of watercraft that one could ever dream of on exhibit, as well as fancy cars and even a submarine. Private Parties, with the dress as “yacht chic”, were popping up everywhere after dark. Even the kids had a great time sampling all of the different foods and picking out their “dream boat”. Sailor, our fourth child, was mesmerized by the 41 foot Jupiter and claimed that to be his future boat. I hope with the name Sailor he will be destined to make that happen. I personally loved just strolling through the aisles of beautiful boats and people while sipping on a potent pina colada.

Later, we continued enjoying this amazing place we live as we walked to the resort for some relaxation over a fabulous dinner from Chef’s brand new menu. I tried the Mango Habanero Organic Salmon with the tomato-avocado vegetable salsa and carrot sweet potato puree. It was so delicious and healthy, too! The Shaved Brussel Sprout Salad with chopped kale, butternut squash, dried apricot, Asian pear, pumpkin seeds, feta cheese and maple dijon dressing was to die for! I can’t wait to go back for the Heirloom Tomato Mozzarella Salad this coming weekend. Right now I think I need to book a fabulous pedicure in the spa after walking so much at the Boat Show. I will blog about more new menu items and my spa experience in our spa soon.
