Hi! I hope everyone is enjoying the beautiful fall weather. We certainly are here at the resort. The skies have been crystal clear, with daytime temperatures averaging 75 degrees, and the local surfers have been enjoying the large waves rolling in.
On Thursday we had a tasting of Chef Phil’s new lunch menu and it was amazing! The first dish we tried was a salad of romaine lettuce with candied pecans, dried apricots and pomegranates topped with a beautiful piece of wild salmon. The salmon was great and the salad tasted like dessert! I was so excited to taste the chicken quesadillas next. They were so delicious and will be new to the lunch menu and will also be available on the Promenade Bar menu until 5:00 every day. Another great addition to the menu will be a salad of spinach and romaine with little pieces of cauliflower, other pickled vegetables and slices of flat iron blackened steak on top. My favorite item that we tasted was a salad consisting of this amazing sous vide smoked pulled chicken over romaine lettuce with avocado, corn, black beans and tortilla chips and dressing made of avocado with Greek yogurt and honey. I also loved the coconut shrimp with a side salad of jicama, grilled pineapple, shredded Napa cabbage, green mango, and papaya topped with a little toasted coconut. We also tried two rare tuna appetizers and decided to feature the presentation with the round banana chips and fresh guava.
I really wish Demi and Dani could have experienced the tasting because they would have completely appreciated the many super foods – avocado, pomegranates, papaya, guava and more – that Chef Phil has included in the new menu. I believe that menu will be available after the first of November, just in time for the Boat Show! We are so excited!
