Hi! This is such an exciting week at the resort! In the next few days, we will have a petting zoo down on the beach, yoga, an outdoor movie, stilt walkers, face painters, cotton candy, snow cones and more! I am also so looking forward to Chef Phil’s Easter Brunch. He has created an extravaganza with a Carving station, Omelette station, Quinoa and Farro Risotto Station, and other buffet items that sound interesting and delicious. I am super excited about the Pretzel Crusted Mahi Mahi and the Crustless Quiche Lorraine. Chris is looking forward to the Apricot Glazed Ham with ginger roasted pineapple relish, and the kids are already thinking about the Swiss Chard Ravioli. We traditionally eat Easter Bruch at the resort and then we go home and I cook Easter dinner. Out of the almost 52 years I have been on this planet I have only missed one Easter at Lago Mar:) Sometimes I wish we could go back for Chef Phil’s Easter Dinner so I wouldn’t have to cook. Also, the Easter Dinner menu sounds incredible! I would love to try Chef’s Pan Flashed Hawaiian Kampachi with coconut carrot puree and fennel roasted baby pepper coconut sauce – sounds so awesome! I am planning on making lamb chops but mine will probably not compare to Chef’s Seared Lamb Chops with blueberry balsamic lamb au jus and a pancetta vegetable creamy farro. I think I might just have to cheat this year.
