Hi! What a wonderful whirlwind weekend we have had here at Lago Mar! The weather has been absolutely gorgeous with not one cloud in the sky. St. Patrick’s Day was a huge success with Chef Phil serving almost 1,000 happy customers! He had his Fitbit on and it actually read that he had been active on his feet 17 hours on Saturday. I know our guests and members appreciated his hard work because we have received so many compliments! Of course, the Beer Braised Corned Beef and Cabbage was the most popular of Chef’s three choices, but I actually enjoyed the Dubliner Crusted Baked Cod with Dubliner cheese quinotto, baby carrot and peas, and a sweet pea sauce – so delicious! Chipper and Sailor really loved the Irish Lamb and Stout Stew with lamb, parsnip, carrots, onions, celery, peas, tomatoes, and a swiss chard ravioli.
It was fun to see most of our dinner/lounge guests wearing green to celebrate the holiday and showing their gratitude for the complimentary St. Patty’s Day hats, leis, and noisemakers. The Wine Cellar Lounge was overflowing with energy and festive decorations. I know I saw lots of shamrocks but I think I might have even seen a little leprechaun! I think I need to try a treatment in the spa to recover from such a big weekend! I will let you know what I choose.
