Hi! I can’t believe it has been almost a year since our “Last Supper” at Lago Mar due to the pandemic. As most of us remember, one year ago, the shutdowns began on March 17th during the dinner hour. St. Patrick’s Day 2020 was the last dining experience/gathering we had for a while.

I vividly remember sitting in Acquario with Chris and the kids and suddenly learning that we would have to go to grab-and-go the next day. After a tough year, we are extremely grateful to be open, busy, and healthy.

I have personally decided to celebrate this good news with an amazing, festive St. Patrick’s Day Dinner and evening at the resort. We will probably meet friends in the Wine Cellar Lounge. I’m looking forward to showing my friends our beautiful new furniture, which has created an entire new look in this space. Then we will head into Acquario for the Irish Feast! Of course, Chef Grant will serve his Traditional Corned Beef And Cabbage. I personally can’t wait for the Irish Cheddar & Chive Crusted Cod with a Dill Grainy Mustard Cream Sauce, Smashed Herbed Red Potatoes and Sautéed Baby Carrots and Green Beans. The kids are super excited for the Shepherd’s Pie with Creamy Yukon Mashed Potatoes.

I think I am going to run into The Resort Shop and see if Amber has any fun green outfits and then maybe I should check with the spa to see if I can get a manicure with green polish, of course.

This year I am going all out because I am so ecstatic to see things getting back to normal! Hope to see many of our members and resort guests for the festivities next Wednesday!
