Hi! As promised, I spoke to Chef Grant, and I am super excited to share his Valentine’s Day Dinner Menu. For Starters, Chef is planning to prepare his Crab Cakes and Shrimp Mac & Cheese. His next course consists of my three favorite salads: Kale & Romaine Caesar Salad, Strawberry and Arugula Salad, and Tomato & Burrata Mozzarella Salad.
Over the weekend, the kids and I had the opportunity to join the Food & Beverage Team to taste the entrees, and every item was so delicious and beautifully presented. The Quinoa & Kale Stuffed Chicken has an amazing savory stuffing of kale, quinoa, fresh herbs and havarti cheese. (I loved it so much that I asked if we could offer it as a special on a regular basis!) The Pecan Crusted Corvina is always a hit. The boys couldn’t stop eating The Filet, and the Pan Seared Jumbo Sea Scallops, with a passion fruit beurre blanc served with tropical style jasmine rice, cilantro, scallions and sweet plantains was incredible.
As we do every year we honor the Ladies on this romantic holiday by presenting them with a beautiful long-stemmed rose as they enter Acquario. Hope to see many of our resort guests and club members on February 14th to celebrate!
