Hi! The kids and I have been super busy with all of the “end of the year” events pertaining to school, some of which I have actually hosted at Lago Mar. All were successful but I have missed writing my blog. Thankfully, summer vacation is days away and we are so looking forward to traveling to a few fun places and spending most of our time here at the resort with friends.

In the past week, I have been dining at the resort quite a bit and I have to report that my new favorite dinner item in Acquario is the Seafood and Black Pepper Fettuccine with scallops, shrimp, mussels, roasted cherry tomato, roasted baby peppers, parmesan cheese, black pepper fettuccine and a tomato lobster sauce. It has a slight kick, which I love, and is really tasty. The girls’ favorite still remains the Wild Mushroom Ravioli with balsamic portabella, charred baby peppers, kale, roasted cherry tomato and creamy marsala wine sauce.

We are so looking forward to spending the afternoons at the resort, relaxing in the ocean after long days of tennis and entertaining friends for dinner on the Sea Grape Terrace. Just counting the days!

I almost forgot to mention that last week that we had another famous Yogi stay with us – Fit Queen Irene! She is an international yoga teacher and holistic health coach and she is definitely “fit”. Unfortunately, we were out of town and missed the opportunity to meet her or attend one of her workshops at Yoga Joint but we’re hoping that she will be back to visit us again.
