Mothers Day dessert buffet May 24, 2018 5:12 pm

Hi! I am so sorry that I haven’t posted a blog lately, but I have been so busy with “end of the school year” activities! Just to keep you up with what has been going on, here’s what we’ve been up to.
We had an amazing Mother’s Day Celebration in Acquario. Chef Phil outdid himself again with his beautiful, bountiful buffet. He actually tried something completely different this year, as he featured a Poke Station, which consisted of a base (jasmine rice, mixed greens, brown rice) and a protein (diced tuna, shrimp, scallops, tofu, crab meat). Then there was a choice of several toppings (avocado, cilantro leaves, European cucumber, pickled daikon radish, diced mango and pineapple, seaweed salad, and kimchi). Lastly, there were many sauces available. My two favorite were the wasabi mayo and the sriracha mayo. I obviously like it hot! The second brand new station Chef created was an Argentinean Grill Station, also known as la plancha. He gave our guests a choice of sous vide skirt steak, chicken kabobs, vegetable kabobs, chorizo sausage, and/or roasted potatoes. Some of the delicious sauces to choose from included chimichurri verde, salsa criolla, sweet and spicy tomato jam, and sangria glaze. Of course, we still offered “Salads and Displays” and “Buffet Items”. The desserts were awesome with the chocolate fountain being the biggest hit!

I was sorry to miss the Extravaganza but my future mother-in-law is 89 years old so we spent the day with her in Jupiter. I was happy to hear Chef’s report at our staff meeting describing the wonderful compliments he received that day, especially the rave reviews about the new stations. At our resort, we try very hard to honor our traditions/rituals yet open ourselves up to experimenting with new ideas to please our guests and members. It is challenging yet very exciting at the same time.
